Our house culture of naturally foraged yeast and bacteria laid to rest with a base saison brewed in October 2020.

Extended contact time with Chardonnay pomace from Benson & the Mooch Wines. A lightly tart beer that finishes with a dry carbonic fizz of stone fruit, citrus, and vanilla.

Lower carbonation for a more rounded fruit forward finish.

Total ageing time 18 months
9 months in French oak
