Sunblanket

This beer holds a special place for us. Named after one of our original foraged house cultures, Sunblanket is the only beer we’ve made using this culture on its own, pulled from a single puncheon and left completely unblended. It’s been aging and evolving over the last 3.5 years, and watching its transformation has been a wild ride - equal parts terrifying and magical.

On the nose, expect wild tropical yeast funk, delicate citrus, and a touch of tobacco.
On the palate, Sunblanket offers medium acidity with bright notes of orange and mandarin, layered tropical fruits, a whisper of fresh tobacco, and a dry, classic saison finish.
