We aged a Belgium style saison for 5 months in French Oak before re-fermenting it with Syrah pressings from Carto Wine for a further 9 months. We then returned to French Oak with Shiraz lees and our foraged house culture 'sunshine' for another 10 months.
Father Mauve is a beautiful interplay of ageing and grape re-fermented beer. Beer and plum is balanced with light tannin and finished with subdued but refreshing tartness.
